Lets say I have white layer, and I place white text over it. How can I get that text to invert to black when it hits the white?
I can do a mask but this should be dynamic like blend styles

Just did a little test.
Drew a rectangle half of my document, filled it with white.
Chose my Text tool and typed a word on a different layer, filled with white.
Selected the text layer and went to menu Layers > Layer Styles > Blending options.
In the next menu I selected the blending option 'Exclusion'. It did the trick
