How do you trust client you get online?

Online clients are easy. Email them an agreement, have them respond and agree to what you say...
I've only gotten one client online and it was either through this site or a mac site I used to go to. It was a fellow designer who needed someone to illustrate something for them. We emailed a lot back and forth and then he paid me via paypal before I released the file to him.
