When you save the file as an 'Illustrator EPS' it should give you the option 'Save Linked Files'. This will embed any links you have in the file. I'm not sure on the version of Illustrator you're using but CS2 also allows you any embed the fonts.
You should also check the 'Links Window' to make sure all of the links for your file are intact before sending to a printer.
Note: If you want to avoid this issue altogether don't click the 'LINK' button when you place artwork into Illustrator.
Some printers might ask you for a PDF. It's always best to call and talk with the printer that will be working on your file for what they prefer.

Don't forget that you can save Illustrator files as pdfs, and they print great! Also make sure all your linked files are updated before saving a pdf.
I recommend pdf/x-1a format for the best results.
