Illustrator beginner

This is my first post here and I want to thank you all for very useful information that is here on this site.
I want to learn how to "cut" things in Illustrator CS2. By that I mean like if I had a circle and wanted a pacman like shape...just like cutting a cake :)
I have tried to use the pen tool but somehow I find it overcomplexed to use just to cut things out.

If I were to do something similar, I would add 3 extra points to the circle. One where the mouth starts, on where the mouth ends and one in the middle, which you would drag to the centre of the circle to create the kind of Pacman look. Once done you can tweak the position by using the handles.

I would recommend drawing an indepentent shape on top of the circle that you'd like to 'cut out' and experiment with 'Window:Pathfinder' options for removing unwanted areas. This is an extremely power technique and in CS2 you can even reverse the process back to the original shapes if at a later time you change your mind.
For some excellent tutorials I'd also recommend visting http://www.illustrationclass.com/ to view Vonster's amazing techniques. In the 'Archives' on the left you'll find a ton of very nice tutorials.
I'll second that. Way more flexibilty. Non-destructive editing is the way to go.
