What do you think, is there a chance such projects may undermine our profession because clients won't need designers anymore. They can just go to a site and download a design of their liking and use it? Much like open source applications killing the pay software? Or is there no such issue?

I think it's a good place, not so "dangerous" as you think; I mean, if a client suppose to replace a professional support downloading these templates, well, it wouldn't be a good client. Can you imagine him "playing" with code, images?.. :)
